Homemade, no-oven, no-oat granola. Just nuts and seeds and a bit of maple syrup.
- 250 gram of mixed nuts
- 2 table spoons pumpkin seeds
- 2 table spoons sunflower seeds
- 1 table spoon of linseed
- 3 table spoons of Tahini
- 2 -3 table spoons of maple syrup
- bit of himalaya or felur de sel (or which ever salt you like)
Roughly chop all nuts and seeds and put them in a big non sticky frying pan. Roast slowly on low heat for a few minutes till the kitchen is filled with a beautiful smell and the nuts and seeds turn light golden. Stir the Tahini so it is more liquid and pour into the pan. Mix all together so as many nuts are covered in tahini as possible. While keep stirring and roasting after a few minutes mix in the maple syrup and keep stirring the mix. Now sprinkle a bit of salt over the Granola. Turn the heat off and let dry and cool down.
To be honest that is the posh version. Usually, it looks like this: find whatever nuts and seeds I have, chop them, throw them in the pan, put the tahini straight to it, mix well, forget about it, run hysterically in the kitchen because the smell of roasted nuts reaches my nose, get upset because I forgot, stir and hope for the best, forget again, take the frying pan from the oven, pour maple syrup over, sprinkle salt. Let cool down… while nibbling ahead.
